Saffron is harvested by hand from the Crocus sativus flower, commonly known as the “saffron crocus.” The term “saffron” applies to the flower’s thread-like structures or stigma. It can take 75,000 saffron blossoms to produce a single pound of saffron spice. Due to the amount of labor involved in harvesting, saffron is considered one of the world's most expensive spices.
